Pao de Quejo is my favorite type of bread.1 I first had it at one of those Brazilian steakhouses where the gauchos bring skewers of delicious meat around. I’ve bought them frozen from Brazilian groceries and, in later years, grocery chains. Last time I was in a Trader Joe’s they had some in the freezer section.

I wanted to try making them because

  1. they are delicious, duh
  2. they are usually quite expensive in the frozen bread aisle

The hardest-to-find ingredient is tapioca flour. I found some flour at an Asian market so now I had no excuses. The type of cheese required is an article of faith so I used what I had.

The dough is challenging to work with so I mixed it in the breadmaker using the Dough cycle.

oh yes

The flash washed out the colors; they are browned with a crispy outside and dense, cheesy inside. I ate the entire batch for dinner and am now blissfully stuffed. If you have a way to bake in your rig I highly recommend it.
