I agree timeshifting loads to periods of excess power is a useful technique. Unfortunately, OP has no periods of excess power; he’s running a chronic (and in winter months a massive) power deficit.

He cannot mount enough panel on his van to meet his stated power needs in the UK. Because of tragic winter harvest levels I estimate it would take 9,914w of panel to meet his stated power requirements with solar. Needless to say, that won’t fit on a van.
